- 1 cup vegetable broth
- ½ cup sour cream or Greek yogurt (or plant-based alternative)
- 12 ounces egg noodles or pasta of choice
- Chopped parsley for garnish
Instructions
- Cook the noodles: Prepare the noodles according to package directions. Drain and set aside.
- Sauté onions and garlic: In a large skillet over medium heat, sauté the onion in olive oil until softened. Add garlic and cook until fragrant.
- Cook mushrooms: Add mushrooms to the skillet and cook until they release moisture and begin to brown. Season with smoked paprika, thyme, salt, pepper, and soy sauce.
- Thicken the sauce: Sprinkle flour over the mushrooms, then slowly add vegetable broth, stirring to avoid lumps. Simmer until thickened.
- Add lentils and cream: Stir in cooked lentils, then reduce heat and mix in sour cream or yogurt. Simmer until heated through.
- Serve: Serve the stroganoff over noodles or mix noodles into the sauce. Garnish with parsley.
