Instructions
- Preheat the oven: Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Cream butter and sugar: In a large bowl, cream together the softened butter and sugar until light and fluffy. Add the egg, lemon zest, lemon juice, and vanilla extract. Mix until smooth.
- Combine dry ingredients: In a separate bowl, whisk together the flour, baking powder, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients and mix until fully combined.
- Form and bake: Scoop tablespoon-sized amounts of dough, roll into balls, and place on the prepared baking sheet. Gently flatten each ball. Bake for 10–12 minutes until edges are golden.
- Glaze: Whisk together powdered sugar and lemon juice to make the glaze. Drizzle over cooled cookies and let set before serving.
