Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Prepare dry ingredients: In a medium bowl, whisk together flour, baking soda, and salt. Set aside.
  3. Mix wet ingredients: In a large bowl, cream butter and sugar. Beat in the egg, then add lemon zest, lemon juice, and vanilla extract. Mix well.
  4. Combine wet and dry ingredients: Gradually add dry ingredients to wet, mixing just until incorporated. Toss blueberries with cornstarch, then fold them into the dough.
  5. Bake: Scoop dough onto baking sheet. Bake for 10–13 minutes until golden. Cool on sheet for 5 minutes, then transfer to a wire rack to cool completely.
