This Crockpot Vegetable Beef Soup is a hearty and comforting classic perfect for chilly days. Packed with tender beef, fresh vegetables, and rich flavors, it’s easy to prepare and perfect for slow-cooking to tender perfection. Whether for meal prep or a cozy family dinner, this soup delivers satisfying warmth and nutrition in every bowl.

Ingredients

Scale

Beef and Broth

  • 1 1/2 pounds beef stew meat, cut into bite-sized pieces
  • 4 cups beef broth (low sodium)
  • 2 cups water
  • 1 tablespoon olive oil (for browning meat, optional)

Vegetables

  • 3 medium carrots, sliced
  • 3 celery stalks, chopped
  • 3 medium potatoes, diced
  • 1 medium onion, chopped
  • 3 garlic cloves, minced
  • 1 cup green beans (fresh or frozen)
  • 1 cup corn kernels (fresh, frozen, or canned)

Tomatoes and Seasonings

  • 1 can (14.5 oz) diced tomatoes, undrained
  • 1 tablespoon tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • 1/2 teaspoon paprika
  • Salt and black pepper to taste

Instructions

  1. Brown the Beef (Optional): Heat olive oil in a skillet over medium-high heat and brown the beef stew meat in batches. This step adds depth of flavor but can be skipped for convenience. Transfer browned beef to the crockpot.
  2. Add Ingredients to Crockpot: Add beef broth, water, carrots, celery, potatoes, onion, garlic, green beans, corn, diced tomatoes with their juice, tomato paste, dried thyme, dried basil, paprika, salt, and black pepper to the crockpot. Stir everything together to combine evenly.
  3. Cook the Soup: Cover the crockpot and cook on low for 8 to 9 hours or on high for 4 to 5 hours until the beef is tender and the vegetables are fully cooked.
  4. Adjust Seasoning and Serve: Taste the soup and adjust salt and pepper as needed. Serve the soup hot alongside crusty bread or crackers for a comforting meal.

Notes

  • Browning the beef before adding it to the crockpot enhances flavor but can be skipped to save time.
  • This soup freezes well, making it an excellent option for meal prep and leftovers.
  • Feel free to substitute vegetables based on what you have available or prefer.
