For the Meatballs:
- 1 pound ground beef (or a mix of beef and pork)
- ¼ cup panko breadcrumbs
- 1 egg
- 2 green onions (finely chopped)
- 2 cloves garlic (minced)
- 1 teaspoon grated fresh ginger
- 1 tablespoon soy sauce
- 1 tablespoon sesame oil
- ½ teaspoon salt
- ¼ teaspoon black pepper
For the Korean BBQ Sauce:
- ¼ cup soy sauce
- 2 tablespoons brown sugar
- 1 tablespoon rice vinegar
- 1 tablespoon sesame oil
- 2 cloves garlic (minced)
- 1 teaspoon grated ginger
- 1 tablespoon gochujang (Korean chili paste)
- 2 teaspoons cornstarch mixed with 2 tablespoons water
Instructions
- Preheat the oven: Preheat the oven to 400°F (200°C) and prepare a baking sheet.
- Make the Meatballs: Combine all meatball ingredients in a bowl, form into meatballs, and bake for 15–18 minutes.
- Prepare the BBQ Sauce: Simmer together soy sauce, brown sugar, rice vinegar, sesame oil, garlic, ginger, and gochujang. Thicken with cornstarch slurry.
- Coat the Meatballs: Toss baked meatballs in the sauce until coated.
- Serve: Garnish with sesame seeds and green onions before serving.
