Instructions
- Korean BBQ Marinade: In a bowl, whisk together soy sauce, brown sugar, honey, rice vinegar, sesame oil, garlic, ginger, red pepper flakes, green onions, and sesame seeds. Add sliced beef, toss to coat, and marinate for at least 30 minutes (up to 4 hours).
- Corn Topping: In a skillet over medium-high heat, melt butter and cook corn for 3–4 minutes until lightly golden. Season with salt and pepper, then set aside.
- Creamy Sauce: In a small bowl, whisk together mayonnaise, sour cream, lime juice, sriracha, and salt until smooth. Chill until ready to serve.
- Cooking Beef: Heat vegetable oil in a large skillet over medium-high heat. Add marinated beef in batches and cook for 2–3 minutes per side until caramelized and cooked through.
- Assemble Bowls: Divide rice among servings. Top with Korean BBQ beef, buttered corn, and a drizzle of creamy sauce. Garnish with extra green onions and sesame seeds if desired.
