- 1 pound ground beef
- 1 packet taco seasoning mix
- 1/2 cup water
For the Biscuit Crust:
- 2 cups Bisquick or biscuit mix
- 2/3 cup water
For the Casserole Layers:
- 1 can (10 oz) diced tomatoes with green chiles, drained
- 1/2 cup sour cream
- 1/2 cup mayonnaise
- 1 cup shredded cheddar cheese, divided
- 1 medium onion, sliced
- 1 bell pepper, sliced
- 1 can (4 oz) diced green chiles (optional)
Instructions
- Preheat oven to 350°F. In a skillet, cook and season ground beef. Set aside.
- Prepare the Biscuit Crust: Mix Bisquick and water, press into a greased baking dish.
- Make the Casserole Layers: Combine sour cream, mayonnaise, cheese, and tomatoes. Layer beef, veggies, sour cream mixture, and cheese.
- Bake: Bake until golden and bubbly, about 30-35 minutes.
- Cool and Serve: Let it cool before serving.
