A delightful and refreshing chicken salad with a sweet twist from juicy grapes. This easy-to-make salad is creamy, flavorful, and perfect for a light meal or as a sandwich filling.
Ingredients
For the Salad:
- 3 cups cooked chicken breast (chopped or shredded)
- 1 cup red grapes (halved)
- 1/2 cup celery (finely chopped)
- 1/4 cup red onion (finely diced)
- 1/4 cup chopped pecans or walnuts (optional)
- Fresh parsley for garnish (optional)
For the Dressing:
- 1/2 cup mayonnaise
- 2 tablespoons sour cream
- 1 teaspoon Dijon mustard
- 1 tablespoon lemon juice
- 1/4 teaspoon garlic powder
- Salt and black pepper to taste
Instructions
- In a large mixing bowl, combine the chicken, grapes, celery, and red onion.
- Pour the dressing over the chicken mixture and stir until well combined.
In a small bowl, whisk together the mayonnaise, sour cream, Dijon mustard, lemon juice, garlic powder, salt, and pepper.
Fold in the nuts if using. Cover and chill for at least 30 minutes before serving to let the flavors meld. Garnish with fresh parsley if desired. Serve on a bed of lettuce, in a sandwich, or with crackers.
Notes
- For a lighter version, use Greek yogurt in place of sour cream or mayo.
