Ingredients
Scale
Chicken Cutlets
- 4 boneless, skinless chicken breasts (pounded to ½-inch thick)
- 1 cup all-purpose flour
- 2 large eggs (beaten)
- 1½ cups Italian-seasoned breadcrumbs
- ½ cup grated Parmesan cheese
- ½ teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon garlic powder
- ¼ cup olive oil (for frying)
Topping
- 2 cups cherry tomatoes (halved)
- 1 tablespoon balsamic vinegar
- 2 tablespoons olive oil
- 1 clove garlic (minced)
- Salt and pepper to taste
- 1 ball fresh burrata cheese (torn into pieces)
- ¼ cup fresh basil leaves (torn or chopped)
Instructions
- Prepare the breading station: Set up three shallow dishes – one with flour, one with beaten eggs, and one with a mixture of breadcrumbs, Parmesan cheese, garlic powder, salt, and pepper. Dredge each chicken breast in flour, then dip in egg, and finally coat thoroughly in the breadcrumb mixture, pressing gently to adhere.
- Cook the chicken: Heat olive oil in a large skillet over medium heat. Fry the breaded chicken cutlets in batches for 3–4 minutes on each side until they are golden brown and cooked through (internal temperature should reach 165°F). Remove and drain on paper towels to remove excess oil.
- Prepare the tomato topping: In a bowl, mix halved cherry tomatoes, balsamic vinegar, olive oil, minced garlic, salt, and pepper. Let the mixture marinate for 10–15 minutes to enhance the flavors.
- Assemble and serve: Arrange the cooked chicken cutlets on a serving plate or individual plates. Spoon the marinated tomato mixture evenly over each cutlet. Scatter torn pieces of burrata on top, garnish with fresh basil leaves, and serve immediately while warm.
Notes
- You can prepare the tomato topping and bread the chicken in advance for quick meal assembly.
- If fresh burrata is not available, substitute mozzarella cheese as an alternative.
- This dish pairs wonderfully with a fresh arugula salad or crusty Italian bread.
