  • 1/4 cup granulated sugar
  • 1 teaspoon ground cinnamon

Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. Mix dry ingredients: In a medium bowl, whisk together the flour, baking soda, baking powder, salt, and cinnamon.
  3. Cream butter and sugars: In a large bowl, cream the butter, granulated sugar, and brown sugar until light and fluffy.
  4. Add wet ingredients: Beat in the egg, vanilla extract, crushed pineapple, and pineapple juice until fully combined.
  5. Combine dry and wet ingredients: Gradually add the dry ingredients to the wet ingredients, mixing until a soft dough forms.
  6. Prepare coating: In a small bowl, mix the cinnamon and sugar for the coating.
  7. Shape and coat: Scoop tablespoon-sized balls of dough, roll each in the cinnamon sugar mixture, and place on the prepared baking sheets.
  8. Bake: Bake for 10–12 minutes until edges are lightly golden.
  9. Cool: Allow cookies to cool on the pan before transferring to a wire rack to cool completely.
