- 1/4 cup granulated sugar
- 1 teaspoon ground cinnamon
Instructions
- Preheat the oven: Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.
- Mix dry ingredients: In a medium bowl, whisk together the flour, baking soda, baking powder, salt, and cinnamon.
- Cream butter and sugars: In a large bowl, cream the butter, granulated sugar, and brown sugar until light and fluffy.
- Add wet ingredients: Beat in the egg, vanilla extract, crushed pineapple, and pineapple juice until fully combined.
- Combine dry and wet ingredients: Gradually add the dry ingredients to the wet ingredients, mixing until a soft dough forms.
- Prepare coating: In a small bowl, mix the cinnamon and sugar for the coating.
- Shape and coat: Scoop tablespoon-sized balls of dough, roll each in the cinnamon sugar mixture, and place on the prepared baking sheets.
- Bake: Bake for 10–12 minutes until edges are lightly golden.
- Cool: Allow cookies to cool on the pan before transferring to a wire rack to cool completely.
Notes
- Be sure to drain the crushed pineapple well to avoid overly wet dough.
