Steel Cut Pumpkin Oatmeal:
- 1 cup steel cut oats
- 3 cups water
- 1 cup unsweetened almond milk (or any milk)
- 1/2 cup canned pumpkin purée
- 2 tablespoons maple syrup
- 1 teaspoon pumpkin pie spice
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
Toppings:
- Chopped pecans
- Extra maple syrup
Instructions
- Add Ingredients: Add steel cut oats, water, almond milk, pumpkin purée, maple syrup, pumpkin pie spice, cinnamon, and salt to the Instant Pot. Stir to combine.
- Cook: Secure the lid, set the valve to sealing, and cook on Manual High Pressure for 4 minutes. Allow natural pressure release for 10 minutes, then quick release any remaining pressure.
- Finish: Stir in vanilla extract. Adjust consistency with a splash of milk if needed. Serve warm, topped with pecans and maple syrup.
