  • 1 cup unsweetened almond milk (or any milk)

  • 2 tablespoons maple syrup
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract

Toppings:

  • Chopped pecans
  • Extra maple syrup

Instructions

  1. Add Ingredients: Add steel cut oats, water, almond milk, pumpkin purée, maple syrup, pumpkin pie spice, cinnamon, and salt to the Instant Pot. Stir to combine.
  2. Cook: Secure the lid, set the valve to sealing, and cook on Manual High Pressure for 4 minutes. Allow natural pressure release for 10 minutes, then quick release any remaining pressure.
  3. Finish: Stir in vanilla extract. Adjust consistency with a splash of milk if needed. Serve warm, topped with pecans and maple syrup.
