- 1 ½ pounds boneless, skinless chicken breasts or thighs
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- ½ teaspoon dried thyme
- ½ teaspoon rosemary
- 1 teaspoon salt
- ¼ teaspoon black pepper
- 1 cup chicken broth
- 1 tablespoon lemon juice
- 1 tablespoon chopped fresh parsley (optional for garnish)
Instructions
- Season the Chicken: In a small bowl, mix garlic powder, onion powder, basil, oregano, thyme, rosemary, salt, and pepper. Rub the seasoning evenly over both sides of the chicken.
- Sear the Chicken: Turn the Instant Pot to Sauté and heat the olive oil. Sear the chicken on both sides for 2-3 minutes until lightly browned.
- Add Broth and Pressure Cook: Add chicken broth and lemon juice to the pot. Secure the lid, set the valve to sealing, and cook on Manual High Pressure for 8 minutes (10 minutes if using thick breasts or thighs). Allow a 5-minute natural release, then quick release any remaining pressure.
- Rest and Serve: Remove the chicken, rest for a few minutes before slicing. Garnish with chopped parsley if desired.

- You can thicken the sauce with a cornstarch slurry for a light gravy.
