  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • ½ teaspoon dried thyme
  • ½ teaspoon rosemary
  • 1 teaspoon salt
  • ¼ teaspoon black pepper
  • 1 cup chicken broth
  • 1 tablespoon lemon juice
  • 1 tablespoon chopped fresh parsley (optional for garnish)

Instructions

  1. Season the Chicken: In a small bowl, mix garlic powder, onion powder, basil, oregano, thyme, rosemary, salt, and pepper. Rub the seasoning evenly over both sides of the chicken.
  2. Sear the Chicken: Turn the Instant Pot to Sauté and heat the olive oil. Sear the chicken on both sides for 2-3 minutes until lightly browned.
  3. Add Broth and Pressure Cook: Add chicken broth and lemon juice to the pot. Secure the lid, set the valve to sealing, and cook on Manual High Pressure for 8 minutes (10 minutes if using thick breasts or thighs). Allow a 5-minute natural release, then quick release any remaining pressure.
  4. Rest and Serve: Remove the chicken, rest for a few minutes before slicing. Garnish with chopped parsley if desired.
