Ingredients
Scale
Chicken
- 2 chicken breasts
- Salt and pepper, to taste
- 1 tbsp olive oil
- 1 tbsp hot honey
Salad Base
- 2 cups mixed greens
- 1/2 cup cucumber, sliced
- 1/2 avocado, sliced
Instructions
- Season the Chicken: Season the chicken breasts evenly with salt and pepper on both sides to enhance flavor.
- Cook the Chicken: In a pan over medium heat, heat the olive oil. Add the chicken breasts and cook for 6-7 minutes on each side until the internal temperature reaches 165°F (75°C) and the chicken is fully cooked through.
- Drizzle Hot Honey: Remove the cooked chicken from the pan and drizzle hot honey evenly over both sides, allowing the glaze to coat the chicken while it’s warm.
- Assemble the Bowl: Place the mixed greens in each serving bowl as a base. Arrange sliced cucumber and avocado on top of the greens, then place the hot honey chicken over them.
- Serve: Optionally add your favorite dressing or a simple vinaigrette for extra flavor. Serve immediately to enjoy the contrast of warm chicken and fresh salad.
Notes
- For spicier heat, use hot honey with chili flakes or add a dash of cayenne pepper.
- You can substitute chicken breasts with chicken thighs for a juicier option.
- Use avocado immediately after slicing to prevent browning; a squeeze of lemon juice helps preserve color.
- Leftovers can be refrigerated for up to 2 days and reheated gently to avoid drying out the chicken.
