Ingredients
Scale
Dry Ingredients
- 3 cups old-fashioned rolled oats
- 1 cup nuts (pecans or walnuts; substitute with almonds or cashews if desired)
- 2 teaspoons pumpkin pie spice (adjust to taste)
- 1/2 teaspoon salt
Wet Ingredients
- 1/3 cup coconut oil (melted; can replace with any neutral oil)
- 1/2 cup pure maple syrup
- 1 cup pure pumpkin puree
Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C) to ensure it’s ready for baking the granola evenly.
- Combine Dry Ingredients: In a large bowl, mix the rolled oats, your choice of nuts (pecans or walnuts), pumpkin pie spice, and salt until well combined.
- Add Wet Ingredients: Pour in the melted coconut oil, pure maple syrup, and pumpkin puree. Stir thoroughly to coat all the dry ingredients evenly with the wet mixture.
- Prepare Baking Sheet: Spread the mixture evenly on a baking sheet and press down lightly to form clusters for that perfect granola texture.
- Bake the Granola: Bake in the preheated oven for 45 to 60 minutes, avoiding stirring during the first 30 minutes to allow clusters to set and develop a crunchy texture.
- Cool Completely: Remove from the oven and let the granola cool completely on the baking sheet so it crisps up and forms crunchy clusters.
- Store Properly: Transfer the cooled granola into an airtight container. It will stay fresh for up to two weeks when stored properly.
Notes
- Adjust pumpkin pie spice to your taste preference for more or less warmth.
- You can substitute the nuts with your favorites such as almonds or cashews.
- Use pure pumpkin puree, not pumpkin pie filling, for best results.
- The granola will harden as it cools; avoid stirring during baking initially to create clusters.
- Store in an airtight container at room temperature to maintain crispness.
