Dough:
- 1/2 cup unsalted butter, softened
- 1/2 cup creamy peanut butter
- 1/2 cup granulated sugar
- 1/2 cup light brown sugar, packed
- 1 large egg
- 1 teaspoon vanilla extract

- 1 teaspoon baking soda
- 1/4 teaspoon salt

- 24 chocolate kiss candies, unwrapped
- Extra granulated sugar, for rolling
Instructions
- Preheat the oven: Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.
- Cream butter and sugars: In a large bowl, cream together the butter, peanut butter, granulated sugar, and brown sugar until light and fluffy, about 2–3 minutes.
- Add egg and vanilla: Add the egg and vanilla extract, and mix until fully combined.
- Combine dry ingredients: In a separate bowl, whisk together the flour, baking soda, and salt.
- Combine wet and dry ingredients: Gradually add the dry ingredients to the wet ingredients, mixing until a soft dough forms.
- Shape and bake: Scoop tablespoon-sized portions of dough, roll them into balls, coat in granulated sugar, and place on baking sheets. Bake for 8–10 minutes.
- Add chocolate kisses: Press a chocolate kiss into the center of each cookie immediately after baking.
- Cool and serve: Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
Notes
- Do not overbake for soft cookies.
- Chilling the dough for 30 minutes results in slightly thicker cookies.
- Store in an airtight container at room temperature for up to 5 days.
