Scale
Blueberry Butter Ingredients
- 4 cups fresh or frozen blueberries
- 1/2 cup granulated sugar
- 1/4 cup honey
- 1 tablespoon lemon juice
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- Pinch of salt
Instructions
- Combine Ingredients: In a large saucepan over medium heat, add the blueberries, sugar, honey, lemon juice, ground cinnamon, ground nutmeg, and a pinch of salt. Stir occasionally to mix all ingredients well.
- Simmer the Mixture: Bring the mixture to a gentle simmer, allowing the blueberries to soften and release their juices. Maintain medium heat until bubbling gently.
- Cook Until Thickened: Once the blueberries begin breaking down, reduce the heat to low and cook uncovered for 30 to 40 minutes. Stir frequently to prevent sticking and encourage even thickening until the mixture reaches a smooth, spreadable consistency.
- Puree the Blueberry Butter: Use an immersion blender directly in the pot to blend the mixture until smooth. If unavailable, carefully transfer the mixture to a blender and puree, then return it to the pot.
- Final Thickening: Cook the pureed mixture for another 5 to 10 minutes on low heat, stirring occasionally, to reach your desired thickness.
- Cool and Store: Let the blueberry butter cool slightly before transferring it into clean jars. Seal and refrigerate. It will keep fresh in the refrigerator for up to 3 weeks.
