- 1 cup mashed ripe bananas (about 2 medium)
- 2 large eggs
- 1 1/2 cups milk of choice
- 1/4 cup maple syrup or honey
- 1 teaspoon vanilla extract
Optional:
- 1/2 cup chopped walnuts
Instructions
- Preheat the oven: Preheat the oven to 350°F (175°C) and lightly grease an 8×8-inch baking dish.
- Mix dry ingredients: In a large bowl, combine oats, protein powder, baking powder, cinnamon, and salt.
- Whisk wet ingredients: In another bowl, whisk mashed bananas, eggs, milk, maple syrup, and vanilla.
- Combine ingredients: Pour wet ingredients into dry ingredients, mix well. Fold in walnuts if desired.
- Bake: Spread batter in the baking dish and bake for 30–35 minutes until set and golden.
- Cool and serve: Let it cool for 5–10 minutes before slicing and serving.
