Ingredients
Scale
Heirloom Carrots:
- 2 pounds heirloom carrots (mixed colors, peeled and trimmed)
Seasoning:
- 2 tablespoons olive oil
- 2 tablespoons honey or maple syrup
- 1 tablespoon fresh lemon juice
- 1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Garnish:
- 2 tablespoons chopped fresh parsley (for garnish)
Instructions
- Preheat the oven: Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Prepare the carrots: Place the carrots on the sheet and drizzle with olive oil, honey, lemon juice, thyme, salt, and black pepper. Toss until the carrots are evenly coated.
- Roast the carrots: Spread them into a single layer without overcrowding. Roast for 25–30 minutes, turning once halfway through, until the carrots are tender and caramelized.
- Finish and serve: Remove from the oven and sprinkle with fresh parsley before serving.
Notes
- For added flavor, sprinkle with crumbled goat cheese or feta just before serving.
- If the carrots are very thick, slice them lengthwise so they roast evenly.
- You can substitute maple syrup for honey for a vegan option.
