Description

These honey-roasted heirloom carrots are a colorful and flavorful side dish that pairs perfectly with any meal. The natural sweetness of the carrots is enhanced by a drizzle of honey, a splash of lemon juice, and a sprinkle of fresh herbs. This easy recipe is a great way to showcase the beauty and taste of heirloom carrots.

Ingredients

Scale

Heirloom Carrots:

  • 2 pounds heirloom carrots (mixed colors, peeled and trimmed)

Seasoning:

  • 2 tablespoons olive oil
  • 2 tablespoons honey or maple syrup
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Garnish:

  • 2 tablespoons chopped fresh parsley (for garnish)

Instructions

  1. Preheat the oven: Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Prepare the carrots: Place the carrots on the sheet and drizzle with olive oil, honey, lemon juice, thyme, salt, and black pepper. Toss until the carrots are evenly coated.
  3. Roast the carrots: Spread them into a single layer without overcrowding. Roast for 25–30 minutes, turning once halfway through, until the carrots are tender and caramelized.
  4. Finish and serve: Remove from the oven and sprinkle with fresh parsley before serving.

Notes

  • For added flavor, sprinkle with crumbled goat cheese or feta just before serving.
  • If the carrots are very thick, slice them lengthwise so they roast evenly.
  • You can substitute maple syrup for honey for a vegan option.
