Description

This Healing Cabbage Soup is a comforting and nutritious vegetarian dish packed with vibrant vegetables and flavorful herbs. It’s easy to prepare, perfect for a cozy meal, and supports wellness with its wholesome ingredients and light seasoning.

Ingredients

Scale

Vegetables and Aromatics

  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 4 cups green cabbage, chopped
  • 2 large carrots, sliced
  • 3 stalks celery, sliced
  • 1 large potato, diced

Liquids and Seasonings

  • 2 tablespoons olive oil
  • 6 cups vegetable broth
  • 1 teaspoon dried thyme
  • 1 teaspoon smoked paprika
  • 1 bay leaf
  • Salt and pepper to taste
  • 2 tablespoons fresh parsley, chopped (optional)

Instructions

  1. Sauté Onion: Heat olive oil in a large pot over medium heat. Add diced onion and sauté for 4-5 minutes until the onion becomes translucent, releasing its sweetness and aroma.
  2. Add Garlic: Stir in the minced garlic and cook for 1 minute until fragrant, ensuring it doesn’t brown to maintain a mild flavor.
  3. Add Vegetables: Add chopped cabbage, sliced carrots, celery, and diced potato to the pot. Cook for 5-7 minutes while stirring occasionally to slightly soften the vegetables and meld flavors.
  4. Add Broth and Spices: Pour in the vegetable broth, then stir in dried thyme, smoked paprika, bay leaf, salt, and pepper. Mix everything well to evenly distribute the seasonings.
  5. Simmer Soup: Bring the soup to a boil, then reduce the heat to low. Cover and let it simmer gently for 25-30 minutes, or until all the vegetables are tender and flavors have melded together.
  6. Finish and Serve: Remove the bay leaf, taste and adjust seasoning if necessary. Ladle the soup into bowls and garnish with fresh parsley if desired. Serve hot for a warm, healing meal.

Notes

  • For a creamier texture, you can partially blend the soup using an immersion blender before serving.
  • Feel free to add other vegetables like zucchini or tomatoes to customize the soup.
  • This soup stores well in the refrigerator for up to 3 days and can be frozen for up to 2 months.
  • Use low-sodium vegetable broth to control the salt content.
  • Fresh herbs like thyme or parsley can be substituted or added for more vibrant flavor.
