Ingredients
Scale
Vegetables and Aromatics
- 1 large onion, diced
- 3 cloves garlic, minced
- 4 cups green cabbage, chopped
- 2 large carrots, sliced
- 3 stalks celery, sliced
- 1 large potato, diced
Liquids and Seasonings
- 2 tablespoons olive oil
- 6 cups vegetable broth
- 1 teaspoon dried thyme
- 1 teaspoon smoked paprika
- 1 bay leaf
- Salt and pepper to taste
- 2 tablespoons fresh parsley, chopped (optional)
Instructions
- Sauté Onion: Heat olive oil in a large pot over medium heat. Add diced onion and sauté for 4-5 minutes until the onion becomes translucent, releasing its sweetness and aroma.
- Add Garlic: Stir in the minced garlic and cook for 1 minute until fragrant, ensuring it doesn’t brown to maintain a mild flavor.
- Add Vegetables: Add chopped cabbage, sliced carrots, celery, and diced potato to the pot. Cook for 5-7 minutes while stirring occasionally to slightly soften the vegetables and meld flavors.
- Add Broth and Spices: Pour in the vegetable broth, then stir in dried thyme, smoked paprika, bay leaf, salt, and pepper. Mix everything well to evenly distribute the seasonings.
- Simmer Soup: Bring the soup to a boil, then reduce the heat to low. Cover and let it simmer gently for 25-30 minutes, or until all the vegetables are tender and flavors have melded together.
- Finish and Serve: Remove the bay leaf, taste and adjust seasoning if necessary. Ladle the soup into bowls and garnish with fresh parsley if desired. Serve hot for a warm, healing meal.
