For the dough:
- 3/4 cup pineapple juice (warm, about 110°F)
- 2 1/4 teaspoons active dry yeast (1 packet)
- 1/4 cup granulated sugar
- 1/4 cup melted butter
- 1/4 cup sour cream
- 1 large egg
- 1/2 teaspoon salt
- 3 1/4 cups all-purpose flour
For the filling:
- 1/2 cup brown sugar
- 2 teaspoons ground cinnamon
- 1/4 cup melted butter
- 1/2 cup crushed pineapple (well drained)
For the glaze:
- 1 cup powdered sugar
- 2 tablespoons pineapple juice
- 1/2 teaspoon vanilla extract
Instructions
- In a large mixing bowl, combine warm pineapple juice, yeast, and a pinch of the sugar. Let sit for 5–10 minutes until foamy.
- Stir in the remaining sugar, melted butter, sour cream, egg, and salt. Gradually add the flour, mixing until a soft dough forms.
- Knead for about 5–7 minutes until smooth and elastic. Place in a greased bowl, cover, and let rise in a warm place for 1 hour, or until doubled.
- Punch down the dough and roll it out on a lightly floured surface into a 14×10-inch rectangle.
- Spread melted butter over the dough, then sprinkle evenly with brown sugar and cinnamon. Scatter the drained crushed pineapple on top.
- Roll the dough up tightly and slice into 12 rolls.
- Place the rolls in a greased 9×13-inch baking dish, cover, and let rise for 30 minutes. Preheat oven to 350°F and bake for 20–25 minutes, or until golden brown.
- In a small bowl, whisk together the powdered sugar, pineapple juice, and vanilla until smooth. Drizzle over the warm rolls and serve.
Notes
- For extra tropical flavor, add shredded coconut to the filling or top with toasted coconut.
- These rolls can be made ahead and refrigerated overnight before baking.
