For the dough:

  • 3/4 cup pineapple juice (warm, about 110°F)
  • 2 1/4 teaspoons active dry yeast (1 packet)
  • 1/4 cup granulated sugar
  • 1/4 cup melted butter
  • 1/4 cup sour cream
  • 1 large egg
  • 1/2 teaspoon salt
  • 3 1/4 cups all-purpose flour

For the filling:

  • 1/2 cup brown sugar
  • 2 teaspoons ground cinnamon
  • 1/4 cup melted butter
  • 1/2 cup crushed pineapple (well drained)

For the glaze:

  • 1 cup powdered sugar
  • 2 tablespoons pineapple juice
  • 1/2 teaspoon vanilla extract

Instructions

  1. In a large mixing bowl, combine warm pineapple juice, yeast, and a pinch of the sugar. Let sit for 5–10 minutes until foamy.
  2. Stir in the remaining sugar, melted butter, sour cream, egg, and salt. Gradually add the flour, mixing until a soft dough forms.
  3. Knead for about 5–7 minutes until smooth and elastic. Place in a greased bowl, cover, and let rise in a warm place for 1 hour, or until doubled.
  4. Punch down the dough and roll it out on a lightly floured surface into a 14×10-inch rectangle.
  5. Spread melted butter over the dough, then sprinkle evenly with brown sugar and cinnamon. Scatter the drained crushed pineapple on top.
  6. Roll the dough up tightly and slice into 12 rolls.
  7. Place the rolls in a greased 9×13-inch baking dish, cover, and let rise for 30 minutes. Preheat oven to 350°F and bake for 20–25 minutes, or until golden brown.
  8. In a small bowl, whisk together the powdered sugar, pineapple juice, and vanilla until smooth. Drizzle over the warm rolls and serve.
