Instructions
- Preheat and prepare green beans: Preheat your oven to 350°F (175°C). If using fresh green beans, bring a large pot of salted water to a boil. Add the green beans and blanch for 4–5 minutes until just tender. Drain and set aside.
- Sauté aromatics: In a large skillet, heat olive oil over medium heat. Add the chopped onion and sauté for 3–4 minutes until softened. Stir in the minced garlic and cook for an additional minute.
- Make the sauce: Reduce the heat to low and stir in the cream of mushroom soup, milk, salt, black pepper, and nutmeg if using. Mix well to combine.
- Combine beans and sauce: Stir in the blanched green beans, 2/3 cup of the crispy fried onions, and shredded cheddar cheese if using. Mix until everything is well coated with the sauce.
- Assemble and bake: Transfer the mixture to a greased 9×13-inch baking dish. Bake uncovered for 25 minutes. Then, sprinkle the remaining fried onions evenly on top and bake for an additional 5–10 minutes until the casserole is golden brown and bubbly.
- Serve: Let the casserole cool slightly before serving to allow the flavors to meld and the topping to set.
