- 2 cups cooked rice, quinoa, or couscous
- 1 cup cherry tomatoes, halved
- 1 cup cucumber slices
- 1/2 cup red onion, thinly sliced
- 1/2 cup Kalamata olives
- 1/2 cup feta cheese, crumbled
- fresh parsley or dill for garnish
Instructions
- Marinate the Chicken: In a bowl, whisk together olive oil, lemon juice, garlic, oregano, cumin, paprika, salt, and pepper. Add chicken and toss to coat. Marinate for at least 30 minutes, or up to 4 hours in the refrigerator.
- Prepare the Tzatziki: In a small bowl, mix Greek yogurt, grated cucumber, garlic, dill, lemon juice, olive oil, salt, and pepper to make tzatziki. Chill until ready to serve.
- Cook the Chicken: Heat a grill pan or skillet over medium-high heat. Cook chicken for 5–6 minutes per side, or until internal temperature reaches 165°F (74°C). Let rest for 5 minutes, then slice.
- Assemble the Bowls: Divide rice (or quinoa/couscous) among servings. Top with chicken, cherry tomatoes, cucumber slices, red onion, olives, and feta. Drizzle generously with tzatziki sauce and garnish with parsley or dill.
