Description

This Garlic Parmesan Chicken & Potatoes recipe is a delicious and easy-to-make meal featuring tender, seasoned chicken cubes and perfectly air-fried potatoes tossed in a flavorful garlic parmesan sauce, topped with melted mozzarella cheese. Ready in just 35 minutes, it’s a perfect weeknight dinner for two.

Ingredients

Scale

Potatoes

  • 45 small/medium-sized potatoes, washed, peeled, and cut into small cubes
  • Olive oil (to toss potatoes)
  • Salt (to taste for potatoes)
  • Pepper (to taste for potatoes)
  • Garlic powder (to taste for potatoes)
  • Paprika (to taste for potatoes)

Chicken & Sauce

  • 2 chicken breasts, cut into cubes
  • 2 tablespoons butter
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • 2 tablespoons minced garlic
  • Buffalo Wild Wings Garlic Parmesan Sauce (amount to taste)
  • 1 cup shredded mozzarella cheese

Instructions

  1. Prep and Air Fry Potatoes: Wash, peel, and cut the potatoes into small cubes. Toss the potatoes with olive oil, salt, pepper, garlic powder, and paprika evenly. Place them in the air fryer basket and air fry at 400°F (204°C) for about 20 minutes, shaking the basket a couple of times during cooking to ensure even crisping.
  2. Cook Chicken: While the potatoes cook, cut the chicken breasts into cubes if not done already. Melt the butter in a skillet over medium-high heat. Add the chicken cubes and cook until browned and thoroughly cooked. Season the chicken with salt, pepper, paprika, onion powder, and Italian seasoning as it cooks.
  3. Combine Ingredients: Once the chicken is cooked through, add the minced garlic and an appropriate amount of Buffalo Wild Wings Garlic Parmesan Sauce to the skillet. Stir well to coat all chicken pieces. Then, add the air-fried potatoes to the skillet and toss everything together to combine the flavors.
  4. Melt Cheese: Sprinkle the shredded mozzarella cheese evenly over the chicken and potatoes mixture. Place the skillet under the oven broiler for a few minutes until the cheese is melted, bubbly, and slightly golden. Alternatively, cover the skillet with a lid and leave it on the stovetop on low heat until the cheese melts completely.
  5. Serve: Serve the garlic parmesan chicken and potatoes hot, straight from the skillet, and enjoy your flavorful meal!

Notes

  • Shaking the air fryer basket halfway through cooking helps the potatoes cook evenly and get crispier.
  • If you don’t have Buffalo Wild Wings Garlic Parmesan Sauce, you can substitute with another garlic parmesan sauce or make your own by mixing butter, garlic, parmesan cheese, and herbs.
  • For a milder garlic flavor, reduce the amount of minced garlic or swap fresh garlic for garlic powder.
  • You can customize the seasoning to your taste, adding extra herbs or spices as preferred.
  • Broiling the cheese gives a wonderful texture, but if you don’t want to use the oven broiler, melting the cheese on the stovetop is a great alternative.
