For the Steak Bites:
- 1½ pounds sirloin or ribeye steak, cut into 1-inch cubes
- 1 tablespoon olive oil
- 3 tablespoons unsalted butter
- 4 cloves garlic, minced
- 1 teaspoon fresh thyme or parsley, chopped
- Salt and pepper to taste
For the Mashed Potatoes:
- 2 pounds Yukon gold or russet potatoes, peeled and cubed
- 4 tablespoons unsalted butter
- ½ cup sour cream or heavy cream
- ¼ cup milk (more as needed)
- Salt and pepper to taste
Instructions
- Make the Mashed Potatoes: Place the cubed potatoes in a large pot and cover with cold water. Add a pinch of salt and bring to a boil. Cook until potatoes are fork-tender, about 15–20 minutes. Drain and return to the pot.
- Add butter, sour cream (or heavy cream), and milk. Mash until smooth and creamy, adding more milk as needed for desired texture. Season with salt and pepper to taste. Cover and keep warm.
- Cook the Steak Bites: Season steak cubes with salt and pepper. Heat olive oil in a large skillet over high heat. When hot, add the steak in a single layer (work in batches if needed). Sear for 1–2 minutes per side until browned and just cooked through. Remove to a plate.
- Reduce heat to medium. In the same skillet, add butter and garlic. Sauté for 1 minute, scraping up any browned bits. Return steak to the pan and toss to coat in the garlic butter. Sprinkle with fresh thyme or parsley.
- Serve steak bites over the mashed potatoes with extra garlic butter from the pan spooned on top.
Notes
- For extra flavor, add a splash of Worcestershire sauce to the butter or finish with a squeeze of lemon.
- Avoid overcrowding the skillet to ensure a proper sear on the steak.
