Description

This Garlic Butter Steak Bites and Smashed Potatoes recipe combines tender, juicy steak pieces seared in a fragrant garlic butter sauce with crispy, golden smashed baby potatoes. Perfect for a comforting yet elegant dinner, this dish is easy to prepare and packed with flavor, making it ideal for weeknight meals or special occasions.

Ingredients

Scale

For the Smashed Potatoes

  • 1.5 pounds baby potatoes
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

For the Garlic Butter Steak Bites

  • 1 pound sirloin or ribeye steak, cut into bite-sized pieces
  • 1 tablespoon olive oil
  • 2 tablespoons butter
  • 4 cloves garlic, minced
  • 1 teaspoon fresh thyme or rosemary, chopped
  • 1 tablespoon chopped parsley, for garnish
  • Salt and pepper to taste

Instructions

  1. Prepare the Potatoes: Preheat your oven to 425°F (220°C). Boil the baby potatoes in salted water for 15–20 minutes until they are fork tender. Drain well and transfer to a parchment-lined baking sheet.
  2. Smashed and Roast Potatoes: Gently smash each potato with the bottom of a glass or fork. Drizzle with olive oil and season with salt and pepper. Roast in the oven for 20–25 minutes until the potatoes are crispy and golden brown.
  3. Season Steak Bites: While the potatoes roast, season the steak pieces evenly with salt and pepper.
  4. Sear the Steak Bites: Heat olive oil in a large skillet over medium-high heat. Add steak bites in a single layer and sear for 1–2 minutes per side, working in batches to avoid overcrowding. Remove the seared steak bites and set aside.
  5. Make Garlic Butter Sauce: Reduce heat to medium and add butter to the skillet. Stir in minced garlic and fresh herbs, cooking for 1–2 minutes until fragrant and buttery.
  6. Toss Steak in Garlic Butter: Return the steak bites to the skillet and toss thoroughly to coat them in the garlic butter sauce.
  7. Serve: Plate the crispy smashed potatoes and top with the garlic butter steak bites. Garnish with chopped parsley and drizzle with any remaining garlic butter from the pan, if desired.

Notes

  • Avoid overcrowding the pan when searing steak to ensure a good crust and even cooking.
  • Potatoes can be boiled and prepped ahead of time, then roasted just before serving for convenience.
  • For a well-rounded meal, serve alongside steamed greens or a fresh salad.
