Ingredients
Scale
For the Smashed Potatoes
- 1.5 pounds baby potatoes
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
For the Garlic Butter Steak Bites
- 1 pound sirloin or ribeye steak, cut into bite-sized pieces
- 1 tablespoon olive oil
- 2 tablespoons butter
- 4 cloves garlic, minced
- 1 teaspoon fresh thyme or rosemary, chopped
- 1 tablespoon chopped parsley, for garnish
- Salt and pepper to taste
Instructions
- Prepare the Potatoes: Preheat your oven to 425°F (220°C). Boil the baby potatoes in salted water for 15–20 minutes until they are fork tender. Drain well and transfer to a parchment-lined baking sheet.
- Smashed and Roast Potatoes: Gently smash each potato with the bottom of a glass or fork. Drizzle with olive oil and season with salt and pepper. Roast in the oven for 20–25 minutes until the potatoes are crispy and golden brown.
- Season Steak Bites: While the potatoes roast, season the steak pieces evenly with salt and pepper.
- Sear the Steak Bites: Heat olive oil in a large skillet over medium-high heat. Add steak bites in a single layer and sear for 1–2 minutes per side, working in batches to avoid overcrowding. Remove the seared steak bites and set aside.
- Make Garlic Butter Sauce: Reduce heat to medium and add butter to the skillet. Stir in minced garlic and fresh herbs, cooking for 1–2 minutes until fragrant and buttery.
- Toss Steak in Garlic Butter: Return the steak bites to the skillet and toss thoroughly to coat them in the garlic butter sauce.
- Serve: Plate the crispy smashed potatoes and top with the garlic butter steak bites. Garnish with chopped parsley and drizzle with any remaining garlic butter from the pan, if desired.
Notes
- Avoid overcrowding the pan when searing steak to ensure a good crust and even cooking.
- Potatoes can be boiled and prepped ahead of time, then roasted just before serving for convenience.
- For a well-rounded meal, serve alongside steamed greens or a fresh salad.
