Instructions
- Boil the Potatoes: Place the baby potatoes in a large pot of salted water and bring to a boil. Cook for 15–20 minutes or until fork-tender. Drain and let cool slightly.
- Preheat the Oven and Prepare Potatoes: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper. Spread the potatoes on the baking sheet and gently smash each one with the bottom of a glass or fork until flattened but still intact.
- Season and Roast Potatoes: Drizzle the smashed potatoes with olive oil and sprinkle with garlic powder, salt, and pepper. Roast in the oven for 20–25 minutes or until crispy and golden brown.
- Add Cheese to Potatoes: Remove the potatoes from the oven and sprinkle evenly with shredded cheddar and grated Parmesan cheese. Return to oven and roast for an additional 5 minutes until the cheese is melted and bubbly. Garnish with chopped chives or green onions, if using.
- Season the Steak: While the potatoes are roasting, season the sirloin steak cubes generously with salt and pepper.
- Sear the Steak Bites: Heat olive oil in a large skillet over medium-high heat. Add the steak bites in a single layer, working in batches if necessary. Sear each side for 2–3 minutes until browned and cooked to your liking.
- Add Garlic Butter: Reduce heat to medium, add butter and minced garlic to the skillet. Stir continuously for 1–2 minutes, basting the steak with the garlic butter to infuse flavor.
- Finish and Garnish Steak: Remove the skillet from heat and sprinkle the steak bites with fresh chopped parsley for a bright, fresh finish.
- Serve: Plate the garlic butter steak bites hot alongside the cheesy smashed potatoes and enjoy immediately.
