Description

These Garlic Butter Grilled Mushrooms are a flavorful and easy side dish or appetizer perfect for summer grilling. Juicy whole mushrooms are coated in a delicious garlic butter mixture, grilled to perfection, and served with a squeeze of fresh lemon.

Ingredients:

  • 1 pound whole mushrooms, cleaned
  • 3 tablespoons unsalted butter, melted
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 tablespoon fresh parsley, chopped
  • 1 tablespoon fresh thyme leaves (or 1/2 teaspoon dried)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • lemon wedges for serving

Instructions

  1. In a large bowl, whisk together melted butter, olive oil, garlic, parsley, thyme, salt, and pepper. Add mushrooms and toss until evenly coated.
  2. Preheat grill to medium-high heat. Thread mushrooms onto skewers or use a grill basket.
  3. Grill for 10 to 12 minutes, turning occasionally, until tender and lightly charred.
  4. Remove from grill and drizzle with any leftover garlic butter mixture. Serve hot with lemon wedges.

Notes

  • If using wooden skewers, soak them in water for 30 minutes before grilling.
  • Cremini or button mushrooms work best, but you can also use portobello caps sliced thick.
  • These mushrooms make a great side for steak, chicken, or can be served over rice or pasta.
