These Garlic Butter Grilled Mushrooms are a flavorful and easy side dish or appetizer perfect for summer grilling. Juicy whole mushrooms are coated in a delicious garlic butter mixture, grilled to perfection, and served with a squeeze of fresh lemon.

- 1 pound whole mushrooms, cleaned
- 3 tablespoons unsalted butter, melted
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 tablespoon fresh parsley, chopped
- 1 tablespoon fresh thyme leaves (or 1/2 teaspoon dried)
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- lemon wedges for serving
Instructions
- In a large bowl, whisk together melted butter, olive oil, garlic, parsley, thyme, salt, and pepper. Add mushrooms and toss until evenly coated.
- Preheat grill to medium-high heat. Thread mushrooms onto skewers or use a grill basket.
- Grill for 10 to 12 minutes, turning occasionally, until tender and lightly charred.
- Remove from grill and drizzle with any leftover garlic butter mixture. Serve hot with lemon wedges.
Notes
- If using wooden skewers, soak them in water for 30 minutes before grilling.
- Cremini or button mushrooms work best, but you can also use portobello caps sliced thick.
- These mushrooms make a great side for steak, chicken, or can be served over rice or pasta.
