Steak and Vegetables

  • 1 1/2 lbs thinly sliced ribeye steak
  • 1 tbsp olive oil
  • 1 tbsp unsalted butter
  • 1 medium yellow onion, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 1 tsp garlic powder
  • 3 cloves garlic, minced
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Assembly

  • 4 hoagie or sub rolls
  • 8 slices provolone cheese
  • 2 tbsp mayonnaise (optional)
  • 1 tbsp chopped fresh parsley (optional for garnish)

Instructions

  1. Cook Vegetables: Heat olive oil and butter in a large skillet over medium-high heat. Add the sliced onion and green pepper and cook for 5–6 minutes until softened and slightly caramelized. Add the minced garlic and cook for 30 seconds until fragrant.
  2. Cook Steak: Push the cooked vegetables to the side of the pan. Add the sliced ribeye steak to the skillet. Season with garlic powder, salt, and black pepper. Cook for 3–4 minutes, stirring occasionally, until the steak is browned and just cooked through. Mix the steak and vegetables together in the pan.
  3. Prepare Sandwiches: Preheat the oven broiler. Slice the hoagie rolls in half and place them on a baking sheet. Optionally, spread mayonnaise on the cut sides of each roll for extra flavor.
  4. Assemble and Broil: Evenly pile the hot steak and vegetable mixture into each roll. Top each sandwich with 2 slices of provolone cheese.
  5. Melt Cheese: Place the assembled sandwiches under the broiler for 1–2 minutes or until the cheese is melted, bubbly, and slightly golden. Remove from the oven carefully.
  6. Garnish and Serve: Sprinkle with freshly chopped parsley if desired. Serve the sandwiches immediately while hot and enjoy the rich flavors.

Notes

  • For an extra garlic punch, rub the inside of the rolls with a cut clove of garlic before assembling the sandwiches.
  • Provolone cheese can be swapped with mozzarella or white American cheese depending on your preference.
