Black Bean Brownies:
- 1 can (15 ounces) black beans, drained and rinsed
- 3 large eggs
- 1/3 cup coconut oil (melted) or unsalted butter (melted)
- 3/4 cup coconut sugar or granulated sugar
- 1/2 cup unsweetened cocoa powder
- 2 teaspoons vanilla extract
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup dark chocolate chips (plus extra for topping)
Instructions
- Preheat the oven: Preheat the oven to 350°F (175°C) and prepare an 8×8-inch baking pan.
- Blend black beans: In a food processor, blend black beans until smooth.
- Add ingredients: Add eggs, melted oil/butter, sugar, cocoa powder, vanilla, baking powder, and salt. Process until creamy.
- Combine chocolate chips: Fold in chocolate chips. Pour batter into the pan.
