Description

  • 2 large eggs

Instructions

  1. Dry Ingredients: In a medium bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  2. Wet Ingredients: In a separate bowl, whisk the Greek yogurt, eggs, milk, and vanilla until smooth.
  3. Combine: Pour the wet ingredients into the dry ingredients and stir gently until just combined; the batter will be thick.
  4. Cook: Heat a large nonstick skillet or griddle over medium heat and lightly grease with butter or oil. Scoop 1/4 cup portions of batter onto the skillet and spread slightly with the back of a spoon. Cook for 2–3 minutes, or until bubbles form on the surface and the edges look set. Flip and cook for another 1–2 minutes, or until golden brown and cooked through.
  5. Serve: Repeat with the remaining batter. Serve warm with fresh fruit, syrup, or a dollop of yogurt.
