Ingredients
Scale
Dry Ingredients
- 2 cups (250 g) all-purpose flour
- 3 Tbsp (38 g) granulated sugar
- 2 tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
Wet Ingredients
- 2 large eggs, room temperature
- 2 to 2¼ cups buttermilk, room temperature
- 3 Tbsp unsalted butter, melted and slightly cooled
- 1 tsp vanilla extract
Instructions
- Mix dry ingredients: In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until well combined.
- Combine wet ingredients: In a separate bowl, whisk together the buttermilk, eggs, melted butter, and vanilla extract until smooth.
- Make the batter: Pour the wet ingredients into the dry ingredients and stir gently just until combined. The batter will be thick and have some lumps—do not overmix.
- Rest the batter: Let the batter sit for 30 minutes to thicken and develop flavor, which helps create fluffier pancakes.
- Prepare cooking surface: Heat a griddle or skillet over medium heat and lightly grease with butter to prevent sticking.
- Cook pancakes: Scoop about ⅓ cup of batter per pancake onto the hot skillet. Cook until edges look set and bubbles appear on the surface, approximately 3–4 minutes.
- Flip pancakes: Carefully flip each pancake and cook for another 2–3 minutes until both sides are golden brown and cooked through.
- Serve: Serve the pancakes warm with your favorite maple syrup, fresh berries, or other desired toppings for a delicious breakfast treat.
Notes
- Allowing the batter to rest is key to achieving a fluffy texture.
- Use room temperature eggs and buttermilk for better batter consistency.
- Don’t overmix the batter; lumps are okay and help keep pancakes tender.
- Adjust the buttermilk quantity slightly if the batter seems too thick or thin.
- Keep cooked pancakes warm in a low oven if preparing in batches.
