Description

This Fast and Easy Lazy Pierogi Recipe offers a simple twist on traditional pierogi, using a quick-to-make dough that requires no rolling or filling. Ready in about 30 minutes, these soft, cheese-filled dumplings are boiled, then tossed in butter and served with a sweetened sour cream topping or fresh berries for a comforting, delightful dessert or snack.

Ingredients

Scale

For the Lazy Pierogi Dough

  • 3 cups well-drained farmer’s cheese (tvorog), packed
  • 3 large eggs
  • 1 tsp vanilla extract
  • ½ cup granulated sugar
  • 1¾ cups all-purpose flour

For Cooking & Serving

  • 3 tbsp unsalted butter, melted
  • 1 cup full-fat sour cream
  • 3 tbsp granulated sugar
  • 1 tsp vanilla extract (optional, to mix with sour cream)

Instructions

  1. Make the Lazy Pierogi Dough: In a large bowl, combine the well-drained farmer’s cheese, eggs, vanilla extract, sugar, and all-purpose flour. Mix until a soft dough forms. To test the dough’s consistency, boil a small piece; if it falls apart, gradually add more flour until it holds together well.
  2. Shape the Pierogis: Divide the dough into 4 equal portions. Roll each portion into a long rope and cut into ½-inch pieces, which will form the lazy pierogi dumplings.
  3. Cook the Pierogi: Bring a large pot of water to a boil, and carefully drop the dough pieces in. Boil them until they float to the surface, about 1 minute, ensuring they are cooked through. Use a slotted spoon to remove them from the water.
  4. Toss with Butter: Immediately toss the cooked pierogi pieces with melted unsalted butter to coat evenly and add richness.
  5. Prepare the Sour Cream Mixture: In a small bowl, stir together the full-fat sour cream, sugar, and vanilla extract until well combined and smooth, creating a sweet, creamy topping.
  6. Serve the Pierogi: Place the butter-coated lazy pierogi on serving plates and spoon the sweetened sour cream over them. Alternatively, serve with jam or fresh berries for added flavor.

Notes

  • For a firmer dough, gradually add more flour during mixing if the dough is too sticky or falls apart when boiled.
  • Farmer’s cheese (tvorog) is essential for authentic flavor and texture; if unavailable, ricotta cheese can be a substitute but may alter texture slightly.
  • Serve immediately after cooking for the best texture and flavor.
  • Optional: sprinkle cinnamon or powdered sugar on top for extra sweetness.
  • These lazy pierogi can also be lightly pan-fried after boiling for a golden crust.
