- 3 large eggs
- 1/4 cup melted coconut oil
- 1/4 cup unsweetened applesauce
- 1/4 cup maple syrup (omit for strict Whole30)
- 1 teaspoon vanilla extract
- 1 medium apple, peeled and finely diced
- 1 tablespoon lemon juice
Instructions
- Preheat the oven: Preheat the oven to 350°F (175°C) and line a muffin tin with parchment liners.
- Mix dry ingredients: In a large bowl, whisk together almond flour, coconut flour, baking soda, salt, and cinnamon.
- Combine wet ingredients: In a separate bowl, whisk eggs, coconut oil, applesauce, maple syrup (if using), vanilla extract, and lemon juice until smooth.
- Combine wet and dry ingredients: Add the wet ingredients to the dry ingredients and stir until combined.
- Add apple: Gently fold in the diced apple.
- Bake: Divide the batter among muffin cups and bake for 18–22 minutes until a toothpick comes out clean.
- Cool: Let muffins cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
Notes
- For strict Whole30 compliance, omit the maple syrup.
- These muffins are naturally sweetened with apples and applesauce.
