  • 2 tablespoons coconut flour

Wet Ingredients:

  • 3 large eggs
  • 1/4 cup melted coconut oil
  • 1/4 cup unsweetened applesauce
  • 1/4 cup maple syrup (omit for strict Whole30)
  • 1 teaspoon vanilla extract
  • 1 medium apple, peeled and finely diced
  • 1 tablespoon lemon juice

Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C) and line a muffin tin with parchment liners.
  2. Mix dry ingredients: In a large bowl, whisk together almond flour, coconut flour, baking soda, salt, and cinnamon.
  3. Combine wet ingredients: In a separate bowl, whisk eggs, coconut oil, applesauce, maple syrup (if using), vanilla extract, and lemon juice until smooth.
  4. Combine wet and dry ingredients: Add the wet ingredients to the dry ingredients and stir until combined.
  5. Add apple: Gently fold in the diced apple.
  6. Bake: Divide the batter among muffin cups and bake for 18–22 minutes until a toothpick comes out clean.
  7. Cool: Let muffins cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
