For the Pralines:
- 1 cup granulated sugar
- 1 cup packed light brown sugar
- 1/2 cup heavy cream
- 4 tablespoons unsalted butter
- 1/8 teaspoon salt
- 2 cups pecan halves
- 1 teaspoon vanilla extract
Instructions
- Prepare the Baking Sheet: Line a baking sheet with parchment paper.
- Cook the Praline Mixture: In a medium saucepan, combine granulated sugar, brown sugar, heavy cream, butter, and salt over medium heat. Stir until sugars dissolve and mixture reaches 235°F (soft-ball stage) on a candy thermometer, about 6–8 minutes.
- Add Pecans and Vanilla: Remove from heat, stir in pecans and vanilla extract. Stir briskly until the mixture thickens and becomes creamy, about 2–3 minutes.
- Form the Pralines: Drop spoonfuls of the mixture onto the prepared baking sheet. Allow to cool completely until set before serving.
Notes
- For a richer flavor, lightly toast pecans before adding them to the mixture.
- Store pralines in an airtight container at room temperature for up to 1 week.
