- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 can (14.5 oz) diced tomatoes
- 1 can (10 oz) diced tomatoes with green chilies (like Rotel)
- 1 packet taco seasoning
- 1 packet ranch seasoning mix
- 2 cups beef or chicken broth
Instructions
- Cook Ground Beef: In a large pot over medium heat, cook the ground beef and onion until browned. Add garlic and cook until fragrant.
- Add Ingredients: Stir in beans, corn, tomatoes, seasonings, and broth. Mix well.
- Simmer: Bring to a boil, then simmer for 20–25 minutes, stirring occasionally.
- Serve: Serve hot with desired toppings.
Notes
- This soup stores well and tastes better the next day.
- Add extra green chilies or hot sauce for more spice.
- To make it vegetarian, omit meat and add an extra can of beans.
