Ingredients
Scale
For the Strawberry Compote:
- 2 cups fresh or frozen strawberries (hulled and halved)
- 2 tablespoons granulated sugar (adjust to taste)
- 1 tablespoon lemon juice
- 1/2 teaspoon vanilla extract (optional)
- 1 tablespoon water (if using fresh strawberries)
Instructions
- In a small saucepan over medium heat, combine strawberries, sugar, lemon juice, and water (only if using fresh berries). Stir gently and bring to a simmer.
- Cook for 8–10 minutes, stirring occasionally, until the strawberries break down slightly and the mixture thickens to a syrupy consistency. For a smoother compote, mash the strawberries with the back of a spoon.
- Remove from heat and stir in vanilla extract if using. Let the compote cool slightly before serving.
- Serve warm or chilled over pancakes, waffles, yogurt, oatmeal, cheesecake, or ice cream.
Notes
- Store leftovers in an airtight container in the refrigerator for up to 1 week.
- You can double the recipe for a larger batch or freeze for up to 2 months.
