Instructions
- Prepare Meatballs: In a bowl, combine the ground beef, breadcrumbs, egg, Italian seasoning, salt, and black pepper. Mix thoroughly until well combined, then form the mixture into small, bite-sized meatballs.
- Heat Broth: In a large pot, pour in the beef broth and heat over medium heat until it starts warming up but not boiling vigorously.
- Add Vegetables and Tomatoes: Stir in the diced tomatoes, chopped carrots, and chopped celery. Bring the mixture to a gentle simmer, allowing the vegetables to cook slightly.
- Cook Meatballs: Carefully add the prepared meatballs to the simmering broth and cook for about 15 minutes, ensuring they are cooked through and tender.
- Add Noodles: Add the noodles to the pot and cook until they are tender, usually around 7–10 minutes depending on the noodle type.
- Serve: Once the noodles are cooked, taste for seasoning and adjust if necessary. Serve the soup hot, optionally garnished with fresh parsley for added flavor and color.
