  • 1/2 cup diced green bell pepper
  • 1/2 cup diced red bell pepper
  • 1 cup diced cooked ham
  • 8 large eggs
  • 1/2 cup whole milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 3 cups frozen shredded hash browns (thawed)
  • 1 1/2 cups shredded cheddar cheese

Instructions

  1. Preheat the oven: Preheat the oven to 375°F (190°C) and grease a 9×13-inch baking dish.
  2. Sauté vegetables and ham: Heat olive oil in a skillet over medium heat. Sauté the onion and bell peppers until softened. Add the ham and cook for another 2 minutes.
  3. Prepare egg mixture: In a large bowl, whisk together eggs, milk, salt, and pepper. Add hash browns, sautéed vegetables and ham, and 1 cup of cheese. Mix well.
