Instructions

  1. Cook the pasta: Cook fettuccine according to package instructions until al dente. Reserve 1/2 cup of the pasta cooking water, then drain the pasta.
  2. Prepare the chicken: Season the thinly sliced chicken breasts with salt and black pepper. Heat olive oil in a skillet over medium heat and cook the chicken for 4 to 5 minutes per side until golden brown and cooked through. Remove the chicken from the skillet and set aside.
  3. Sauté garlic: In the same skillet, melt the butter and sauté the minced garlic for about 1 minute until fragrant, being careful not to burn it.
  4. Make the cream sauce: Stir in the heavy cream and bring it to a simmer. Let it cook for 3 to 4 minutes to thicken slightly.
  5. Add cheese and season: Whisk in the grated Parmesan cheese and nutmeg (if using) until the sauce is smooth. If the sauce becomes too thick, add a splash of the reserved pasta water to loosen it.
  6. Combine chicken and pasta: Slice the cooked chicken and return it to the skillet. Add the drained pasta and toss everything together until the pasta and chicken are well coated in the Alfredo sauce.
  7. Serve: Serve the chicken Alfredo immediately, garnished with chopped parsley and extra Parmesan cheese if desired.
