Description

Indulge in the sweet and tangy flavors of summer with this delightful mixed berry crisp. Juicy mixed berries topped with a crunchy oat and brown sugar crumble, baked to golden perfection. Serve warm with a scoop of vanilla ice cream for the perfect ending to any meal.

Ingredients

Scale

Berry Filling:

  • 4 cups mixed berries (such as blueberries, raspberries, blackberries, and sliced strawberries—fresh or frozen)
  • 1/3 cup granulated sugar
  • 1 tablespoon cornstarch
  • 1 tablespoon lemon juice
  • 1/2 teaspoon vanilla extract

Topping:

  • 3/4 cup rolled oats
  • 1/2 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 6 tablespoons unsalted butter (cold and cut into cubes)

Instructions

  1. Preheat the oven and prepare the berries: Preheat the oven to 375°F and lightly grease an 8×8-inch baking dish. In a large bowl, toss the berries with granulated sugar, cornstarch, lemon juice, and vanilla extract. Pour the berry mixture into the prepared baking dish.
  2. Make the topping: In a separate bowl, combine the oats, flour, brown sugar, cinnamon, and salt. Add the cold butter cubes and work the butter into the dry ingredients until the mixture resembles coarse crumbs.
  3. Top the berries and bake: Sprinkle the oat topping evenly over the berries. Bake for 35–40 minutes, or until the top is golden brown and the filling is bubbling around the edges. Let cool slightly before serving.

Notes

  • Serve warm with a scoop of vanilla ice cream or whipped cream.
  • You can use all frozen berries—no need to thaw, just add 1 extra teaspoon of cornstarch.
