Dressing:

  • 1/4 cup fresh chives
  • 2 cloves garlic
  • juice of 2 lemons
  • 1/4 cup olive oil
  • 1/4 cup rice vinegar
  • 2 tablespoons nutritional yeast
  • 1/4 cup walnuts or cashews
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Prepare the Salad: In a large bowl, combine chopped cabbage, cucumber, chives, green onions, parsley, basil, and spinach.
  2. Make the Dressing: In a blender, blend basil, parsley, chives, garlic, lemon juice, olive oil, rice vinegar, nutritional yeast, nuts, salt, and pepper until smooth.
