Description

Decadent Molten Lava Cakes with a rich, gooey chocolate center that perfectly balances sweetness and texture. These individual chocolate cakes are quick to prepare and bake, making them an impressive yet easy dessert to serve for any occasion.

Ingredients

Scale

Chocolate and Butter

  • 4 oz Semi-Sweet Chocolate
  • 4 oz Unsalted Butter

Egg Mixture

  • 2 large Large Eggs
  • 2 large Large Egg Yolks
  • ½ cup Granulated Sugar
  • ¼ teaspoon Salt
  • 1 teaspoon Pure Vanilla Extract

Dry Ingredients

  • â…“ cup All-Purpose Flour

Instructions

  1. Preheat Oven: Preheat your oven to 425°F (220°C). Grease and dust four ramekins with flour or cocoa powder to prevent sticking.
  2. Melt Chocolate and Butter: In a heatproof bowl, combine the chopped semi-sweet chocolate and unsalted butter. Melt them together using a double boiler or microwave until smooth, stirring occasionally.
  3. Whisk Eggs and Sugar: In a separate bowl, whisk the large eggs, egg yolks, granulated sugar, and salt until the mixture becomes pale and slightly thickened, about 2-3 minutes.
  4. Combine Mixtures: Slowly whisk the melted chocolate-butter mixture into the egg mixture to combine evenly. Then stir in the pure vanilla extract for added flavor.
  5. Add Flour: Sift the all-purpose flour over the chocolate mixture. Gently fold the flour in using a spatula, being careful not to overmix, until just combined.
  6. Fill Ramekins: Divide the batter evenly among the prepared ramekins, filling each about three-quarters full to allow space for rising.
  7. Bake: Place the ramekins on a baking sheet and bake in the preheated oven for 12-14 minutes. The edges should be firm but the center should still jiggle slightly for a molten center.
  8. Cool and Serve: Let the cakes cool for 1-2 minutes. Run a knife around the edges to loosen, then invert each ramekin onto a plate. Serve warm immediately for the best molten effect.

Notes

  • For a dairy-free version, substitute unsalted butter with coconut oil.
  • Use dark chocolate instead of semi-sweet for a more intense chocolate flavor.
  • Dust ramekins with cocoa powder instead of flour for a richer edge crust.
  • Be careful not to overbake to ensure the molten center remains gooey.
  • Serve with vanilla ice cream or fresh berries for an indulgent dessert pairing.
