Description

This Crustless Blueberry Pie is a simple and delightful dessert featuring a tender, fluffy batter filled with fresh blueberries. Baked to golden perfection without the hassle of making a crust, it offers a sweet and tangy flavor perfect for summer gatherings or anytime you crave a fruity treat.

Ingredients

Scale

Dry Ingredients

  • 1 cup granulated sugar
  • 1 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder

Wet Ingredients

  • 1/2 cup unsalted butter, melted and slightly cooled
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract (optional)

Main Ingredient

  • 1 1/2 cups fresh blueberries, washed and dried

For Greasing

  • Nonstick cooking spray or butter

Instructions

  1. Preheat and Prepare: Preheat your oven to 350°F (175°C). Grease a 9-inch pie dish thoroughly using nonstick cooking spray or butter to prevent sticking.
  2. Mix Dry Ingredients: In a large mixing bowl, whisk together the sugar, all-purpose flour, salt, and baking powder until evenly combined.
  3. Mix Wet Ingredients: In a separate bowl, whisk the eggs, melted and cooled butter, vanilla extract, and almond extract if using. Ensure this mixture is smooth and homogenous.
  4. Combine Wet and Dry: Pour the wet ingredients into the dry ingredients and mix until fully combined, forming a batter.
  5. Fold in Blueberries: Gently fold the fresh blueberries into the batter, taking care not to break them and to distribute evenly.
  6. Bake the Pie: Pour the batter into the prepared pie dish and spread out evenly. Bake in the preheated oven for 40–45 minutes or until the top is golden brown and a toothpick inserted in the center comes out clean.
  7. Cool and Serve: Allow the pie to cool in the dish for at least 20 minutes before slicing. Serve warm or at room temperature, optionally with whipped cream or vanilla ice cream.

Notes

  • Frozen blueberries can be used if thawed and drained well to avoid excess moisture affecting the bake.
  • For a less sweet pie, reduce the sugar amount to 3/4 cup.
  • This pie is excellent served warm and pairs beautifully with whipped cream or vanilla ice cream.
