This comforting Crockpot Chicken Noodle Soup is a hearty and flavorful dish perfect for any day when you crave a warm, homemade meal. Tender chicken breasts or thighs simmer slowly with fresh vegetables, herbs, and egg noodles in a savory low-sodium chicken broth, resulting in a classic and nourishing soup made effortlessly in your slow cooker.

Ingredients

Scale

Soup Ingredients

  • pounds boneless, skinless chicken breasts or thighs
  • 8 cups low-sodium chicken broth
  • 3 medium carrots, sliced
  • 3 celery stalks, sliced
  • 1 small onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • 1 bay leaf
  • Salt and pepper to taste

Noodles and Garnishes

  • 6 ounces egg noodles
  • 1 tablespoon lemon juice (optional)
  • Chopped fresh parsley for garnish (optional)

Instructions

  1. Combine Ingredients in Crockpot: Place the chicken, low-sodium chicken broth, sliced carrots, sliced celery, chopped onion, minced garlic, dried thyme, dried parsley, bay leaf, salt, and pepper into the crockpot. Stir gently to combine.
  2. Slow Cook the Soup: Cover and cook on low for 6 to 7 hours or on high for 3 to 4 hours until the chicken is fully cooked and the vegetables are tender.
  3. Shred Chicken: Remove the chicken from the crockpot and use two forks to shred it finely.
  4. Return Chicken and Add Noodles: Put the shredded chicken back into the crockpot, then add the egg noodles. Cook on high for an additional 15 to 20 minutes, or until the noodles are tender and cooked through.
  5. Finish and Garnish: Stir in the lemon juice if using. Remove the bay leaf. Ladle the soup into bowls and garnish with chopped fresh parsley before serving.

Notes

  • For more intense flavor, use bone-in chicken and remove the bones after cooking.
  • To save time, substitute cooked rotisserie chicken and reduce the initial cook time by half.
  • Egg noodles can be replaced with gluten-free or whole wheat noodles to suit dietary preferences.
