This Crock Pot Lemon Chicken recipe features tender, juicy chicken breasts cooked slowly with a tangy lemon sauce and Italian seasoning for a flavorful and easy meal perfect for any day of the week.
Ingredients
Scale
Chicken and Coating
- 1/4 cup all-purpose flour
- 2 pounds boneless, skinless chicken breasts, cut into thirds
- salt and pepper, to taste
Cooking and Sauce
- 1/4 cup butter
- 1 packet Good Seasons Italian dressing/seasoning mix
- 1/2 cup fresh lemon juice
- 1/2 cup chicken broth
Instructions
- Prepare Chicken: Rinse the chicken pieces under water, then lightly coat each piece in all-purpose flour. Set the coated chicken aside while you prepare to brown it.
- Start Crock Pot: Plug in your crock pot and set it to low heat to begin warming while you brown the chicken.
- Brown First Half of Chicken: In a large non-stick skillet, heat 2 tablespoons of butter over medium-high heat. Once melted, add half the flour-coated chicken pieces, being careful not to overcrowd the pan. Season with salt and pepper, and cook each piece for 3 to 4 minutes per side until a golden-brown crust forms, but the chicken is not fully cooked through.
- Transfer to Crock Pot: Remove the browned chicken from the skillet and place it in the crock pot, spreading the pieces evenly.
- Brown Remaining Chicken: Add the remaining 2 tablespoons of butter to the skillet. Cook the rest of the flour-coated chicken pieces in the butter over medium-high heat, browning each side for 3 to 4 minutes until golden. Then transfer these pieces to the crock pot as well.
- Add Seasoning and Liquid: Sprinkle the packet of Good Seasons Italian dressing/seasoning mix evenly over all the chicken in the crock pot. Pour the fresh lemon juice and chicken broth on top, covering the chicken with the flavorful sauce.
- Slow Cook: Cover the crock pot with its lid and cook on low heat for 3 hours, allowing the chicken to become tender and soak up the lemony Italian flavors.
- Serve: Serve the chicken pieces whole or shredded, spooning the lemon sauce and broth over the top for a delicious finish.
Notes
- Do not skip browning the chicken; it adds a rich flavor and beautiful texture to the final dish.
- You can adjust the lemon juice quantity to taste for more or less tanginess.
- For thicker sauce, remove chicken after cooking and thicken sauce separately on stovetop if desired.
- This dish pairs well with rice, mashed potatoes, or steamed vegetables.
- Leftovers store well in the refrigerator for up to 3 days.
