Potato & Leek Turkey Hash:

- 1 lb potatoes, peeled and diced small
- 1 leek, cleaned and thinly sliced (white and light green parts only)
- 2 cups cooked turkey breast, diced
- 2 cloves garlic, minced
- 1 tsp smoked paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp fresh parsley, chopped
Instructions
- Heat the olive oil: In a large skillet over medium-high heat.
- Add potatoes: Cook until golden and beginning to crisp, about 10 minutes.
- Add leek: Cook for another 5 minutes until softened.
- Stir in garlic: Cook for 1 minute.
- Add turkey, paprika, salt, and pepper: Cook for 5–7 minutes, pressing down lightly to crisp.
- Serve: Sprinkle with fresh parsley and serve warm, topped with a fried egg if desired.
