Corn Fritters:
- 2 cups fresh or frozen corn kernels, thawed if frozen
- 1 cup shredded cheddar cheese
- 1 cup all-purpose flour
- 1 tsp baking powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 large eggs
- 1/4 cup milk
- 1/4 cup chopped green onions
- Vegetable oil for frying
Instructions
- In a large bowl, combine flour, baking powder, salt, and pepper. Add corn, cheese, and green onions, stirring to coat with the dry mixture.
- In a separate bowl, whisk eggs and milk together, then pour into the corn mixture and stir until combined.
- Heat about 1/4 inch of vegetable oil in a skillet over medium heat. Drop heaping tablespoons of batter into the hot oil, flattening slightly. Cook for 2–3 minutes per side until golden brown and crispy.
- Drain on paper towels before serving.
Notes
- For extra flavor, add chopped jalapeños or smoked paprika to the batter.
