  • 2 cups fresh or frozen corn kernels, thawed if frozen
  • 1 cup shredded cheddar cheese
  • 1 cup all-purpose flour

  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 large eggs
  • 1/4 cup milk
  • 1/4 cup chopped green onions
  • Vegetable oil for frying

Instructions

  1. In a large bowl, combine flour, baking powder, salt, and pepper. Add corn, cheese, and green onions, stirring to coat with the dry mixture.
  2. In a separate bowl, whisk eggs and milk together, then pour into the corn mixture and stir until combined.
