Potato Torte:
- 2 1/2 pounds Yukon Gold potatoes, peeled and thinly sliced
- 3 tablespoons olive oil, divided
- 2 tablespoons balsamic vinegar
- 2 teaspoons fresh thyme leaves
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup grated Parmesan cheese
Instructions
- Preheat oven and prepare potatoes: Preheat oven to 400°F (200°C). Toss sliced potatoes with 2 tablespoons olive oil, balsamic vinegar, thyme, salt, and pepper in a bowl.
- Layer potatoes: Grease a 9-inch pan with remaining olive oil. Layer potato slices in the pan, sprinkling Parmesan cheese between layers and on top.
- Bake: Cover with foil and bake for 35 minutes; then bake uncovered for 25–30 minutes until golden and crispy.
