  • 2 1/2 pounds Yukon Gold potatoes, peeled and thinly sliced
  • 3 tablespoons olive oil, divided
  • 2 tablespoons balsamic vinegar
  • 2 teaspoons fresh thyme leaves
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup grated Parmesan cheese

Instructions
