  • 4 cups chicken broth

  • 1 package (9 oz) refrigerated cheese tortellini
  • 2 cups fresh spinach or kale
  • 1/2 cup heavy cream
  • salt and black pepper to taste

For Serving:

  • grated Parmesan cheese

Instructions

  1. Heat olive oil: In a large pot over medium heat, add olive oil.
  2. Cook sausage: Add sausage, breaking it up and cook until browned, about 5–7 minutes.
  3. Add aromatics: Stir in onion and cook until softened, then add garlic, Italian seasoning, red pepper flakes, and tomato paste; cook for 1–2 minutes.
  4. Add broth and tomatoes: Pour in chicken broth and diced tomatoes, bring to boil.
  5. Cook tortellini: Add tortellini and cook as per package instructions, usually 4–6 minutes.
  6. Finish soup: Reduce heat, add spinach and cream, simmer for 2–3 minutes until creamy and greens are wilted. Season with salt and pepper.
  7. Serve: Serve hot, topped with grated Parmesan.
