- 4 cups chicken broth
- 1 can (14.5 oz) diced tomatoes, with juice
- 1 package (9 oz) refrigerated cheese tortellini
- 2 cups fresh spinach or kale
- 1/2 cup heavy cream

Instructions
- Heat olive oil: In a large pot over medium heat, add olive oil.
- Cook sausage: Add sausage, breaking it up and cook until browned, about 5–7 minutes.
- Add aromatics: Stir in onion and cook until softened, then add garlic, Italian seasoning, red pepper flakes, and tomato paste; cook for 1–2 minutes.
- Add broth and tomatoes: Pour in chicken broth and diced tomatoes, bring to boil.
- Cook tortellini: Add tortellini and cook as per package instructions, usually 4–6 minutes.
- Finish soup: Reduce heat, add spinach and cream, simmer for 2–3 minutes until creamy and greens are wilted. Season with salt and pepper.
- Serve: Serve hot, topped with grated Parmesan.

- For a lighter version, use half-and-half instead of heavy cream.
