Ingredients
Scale
Pasta
- 8 oz egg noodles or pasta of choice
Sauce
- 2 tablespoons butter
- 2 cloves garlic, minced
- 1 tablespoon all-purpose flour
- 1 cup milk
- 1/2 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon onion powder
Garnish
- Chopped parsley for garnish (optional)
Instructions
- Cook the noodles: Bring a large pot of salted water to a boil. Add the egg noodles or your pasta of choice and cook according to package directions until al dente. Drain well and set aside.
- Prepare the roux: In a large skillet over medium heat, melt the butter. Add the minced garlic and sauté for about 1 minute until fragrant but not browned. Whisk in the all-purpose flour and continue to cook for another 1 to 2 minutes to eliminate the raw flour taste and form a roux.
- Make the cream sauce: Slowly pour in the milk and heavy cream, whisking constantly to prevent lumps from forming. Continue to cook and whisk the sauce gently for 3 to 4 minutes until it thickens to a creamy consistency.
- Add the cheese and seasonings: Stir in the grated Parmesan cheese, salt, black pepper, and onion powder. Reduce the heat to low and stir until the cheese melts completely and the sauce is smooth and creamy.
- Toss the noodles with sauce: Add the cooked noodles to the skillet with the sauce. Toss gently but thoroughly until the noodles are evenly coated with the creamy sauce.
- Serve: Plate the creamy noodles warm and garnish with chopped parsley if desired. Enjoy immediately for best flavor and texture.
Notes
- For added protein, mix in cooked chicken, shrimp, or tofu to make it a more substantial meal.
- Use whole milk for a richer and more indulgent sauce, or substitute milk with plant-based alternatives such as almond or oat milk for a lighter version.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stovetop or microwave with a splash of milk to regain creaminess.
